Mushroom Risotto

Mushroom recipes offer a wonderful way to enjoy the earthy and savory flavors of this versatile ingredient. Here’s a recipe for a classic Mushroom Risotto:

 

Ingredients:

 

1 1/2 cups Arborio rice

4 cups chicken or vegetable broth

2 tablespoons olive oil

2 tablespoons butter

1 onion, finely chopped

2 cloves garlic, minced

8 ounces mushrooms (such as cremini or button), sliced

1/2 cup dry white wine (optional)

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions:

 

  1. In a saucepan, heat the chicken or vegetable broth over medium heat until warm. Keep the broth warm on low heat throughout the cooking process.
  2. In a large skillet or Dutch oven, heat the olive oil and butter over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Add the sliced mushrooms to the skillet and cook until they release their moisture and begin to brown, about 5-7 minutes.
  4. Stir in the Arborio rice and cook for 1-2 minutes, stirring constantly, until the rice is lightly toasted.
  5. If using, pour in the white wine and cook, stirring occasionally, until the liquid is absorbed.
  6. Begin adding the warm broth to the rice mixture, one ladleful at a time, stirring frequently. Allow each addition of broth to be absorbed before adding more. Continue this process until the rice is creamy and cooked al dente, which will take about 18-20 minutes.
  7. Once the rice is cooked, stir in the grated Parmesan cheese until melted and well combined. Season with salt and pepper to taste.
  8. Remove the risotto from heat and let it rest for a couple of minutes before serving. Garnish with chopped fresh parsley.
  9. Serve the mushroom risotto hot, optionally topped with additional Parmesan cheese and a drizzle of olive oil.
