Ingredients:
– 1 (28-ounce) can whole tomatoes with their juice
– 2 (10-ounce) cans diced tomatoes and green chilies (like Rotel)
– 1/4 cup chopped onion
– 1 whole jalapeño, quartered and thinly sliced
– 1 clove garlic, minced
– 1/4 teaspoon sugar
– 1/4 teaspoon salt
– 1/4 teaspoon ground cumin
– Juice of 1/2 a lime
– 1/2 cup cilantro, plus more to taste
– Tortilla chips or cheese nachos for serving
Directions:
- Blend It Up: Toss the whole tomatoes, diced tomatoes with green chilies, chopped onion, jalapeño, minced garlic, sugar, salt, cumin, lime juice, and cilantro into a food processor. Pulse it 10 to 15 times until the salsa reaches your preferred consistency. Grab a tortilla chip and taste it; adjust the seasonings if needed.
- Chill Out: Let the salsa chill in the fridge for at least an hour. Serve it up with some tortilla chips or cheese nachos, and enjoy!
